- 12 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 teaspoon white vinegar
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Paprika for garnish
Instructions
- Place eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10-12 minutes.
- Drain hot water and immediately transfer eggs to an ice bath. Let cool completely.
- Peel eggs and cut in half lengthwise. Gently scoop out the yolks and place in a mixing bowl.
- Mash yolks with a fork or potato masher until smooth.
- Add mayonnaise, mustard, vinegar, salt, and pepper. Mix well until combined.
- Spoon or pipe filling into egg white halves.
- Sprinkle with paprika and chill for at least 30 minutes before serving.
Notes
For extra creamy filling, press the yolk mixture through a fine-mesh sieve. Get creative with garnishes! Try smoked paprika, everything bagel seasoning, or fresh herbs.
