- 1 sheet of puff pastry (thawed)
- 2 medium apples (Honeycrisp or Granny Smith), peeled, cored, and diced
- 4 ounces goat cheese, softened
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 egg yolk beaten with 1 tablespoon water, for egg wash
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the diced apples, brown sugar, cinnamon, and nutmeg. Toss until the apples are evenly coated.
- Gently unfold the thawed puff pastry sheet on a lightly floured surface.
- Cut the pastry sheet into squares.
- Spread a thin layer of softened goat cheese onto half of each pastry square, leaving a small border.
- Top the goat cheese with a spoonful of the cinnamon-spiced apple mixture.
- Fold the pastry squares in half, enclosing the filling. Crimp the edges with a fork to seal.
- Brush the tops of the turnovers with the egg wash.
- Place the turnovers on the prepared baking sheet and bake for 15-20 minutes, or until puffed and golden brown.
Notes
- For a crispier bottom, sprinkle the pastry with breadcrumbs before adding the filling.
- Don’t overfill the turnovers.
- Allow the turnovers to cool slightly before serving.
